Historical Fact:

Sylvester Dusi owned a sausage company located on York Mountain in Templeton with a partner. Sylvester was in charge of marketing and sales and drove around the county in his Cadillac delivering sausages to customers.

Ingredients:

  • Salt Pork or vegetable oil
  • Lentils – a one pound bag
  • Red Wine – ½ cup Zinfandel
  • Onions – one yellow onion, finely chopped
  • Garlic – three cloves, finely chopped 
  • Carrots – six medium carrots, finely chopped
  • Celery – six medium stalks, finely chopped
  • Tomato Sauce – one 16 ounce can or two cups homemade
  • Chicken broth – four cups
  • Cumin – ½ teaspoon 
  • Fresh Whole Bayleaf
  • Italian Sausage – four whole links fully cooked and sliced

Method:

  1. To make this delightful recipe, place a large pot on the stove:
  2. Add a piece of salt pork or use vegetable oil and heat the contents. When hot, add the finely chopped onions, carrots, celery and garlic. Cook and stir for five minutes.
  3. Stir in the lentils. Add four cups of chicken broth, ½ cup of red wine, and two cups of tomato sauce. Bring this to a boil and immediately turn down the heat to a simmer. Add dried cumin, the fresh bayleaf, salt and pepper. 
  4. Add cooked sausage slices and stir. Simmer all ingredients together until the lentils are soft. Remove the Bay Leaf.
