Cabernet Sauvignon Grapes

Cabernet Sauvignon is the flagship Paso Robles wine. The Central Coast is known for its geological diversity and variety of microclimates. Marine influences, calcareous soils, and the long growing season with warm days and cool nights promote consistent physiological ripeness season after season. According to the CAB Collective website, “When it comes down to it, Paso Robles Cabernet producers are indeed preoccupied with a lofty goal – capturing the terroir, or specific sense of place, within each bottle. When carried out successfully, Paso Robles’ bold red Bordeaux wines reflect the land. No two vineyards are the same.”
In the 1960s, Farm Advisor Jack Foott planted Experimental Vineyards in San Luis Obispo County to determine where red and white varieties, particularly Cabernet Sauvignon, Chardonnay, Pinot Noir, and Franken Riesling, would thrive. Based on Foott’s research, Stanley Hoffman was the first to plant Cabernet Sauvignon after Prohibition in 1964 in the Adelaida region, west of Paso Robles.
The Paso Robles CAB (Cabernet and Bordeaux) Collective was formed in 2012 to promote the full potential of the Paso Robles AVA in producing superior-quality, classic and age-worthy Cabernet Sauvignon and Red Bordeaux wines to consumers, trade and media worldwide. However, the mission has expanded to include research and education. PRCC is applying for grants and building partnerships to conduct research, regulatory changes, infrastructure, education, and training to identify the needs to sustain the industry and the vineyards by making the necessary changes to weather, water, and climate changes.
This non-profit 501(c)6 agricultural producer group with 27 independent members and over 50 wine industry sponsors is dedicated to promoting and marketing wines made from red Bordeaux wine grapes grown by its members and other grape growers in the Paso Robles region. The names of the members are listed in the box to your left. You will find a map of the area at the bottom of this article.

The PRCC is also preparing for future challenges to ensure that the Paso Robles producers can adapt to climate change, sustain the industry’s economic benefit to the local community, and continue to produce world-class wines, according to Executive Director Linda Sanpei. PRCC was awarded a grant of $14,988 by Western Sustainable Agricultural Research & Education (SARE) and its host institution, Montana University, on October 5, 2022, based on PRCC’s submission of a Sustainable Agriculture Action Plan. These funds will be used to identify specific and urgent needs for research and education. According to Sanpei, the PRCC will use the findings of this report to apply for future climate change-related funding through the USDA and the CDFA and to build research partnerships.
